It was too many chefs. We hired an executive chef who knew how to run a restaurant, manage staff, develop dishes, etc, but hadn't run a kitchen during dinner rush in forever, who was obviously gumming up the process, and probably had his own ideas on the restaurant running part. The good news is we have a couple sous chefs on staff who do know how to run a kitchen during rush. But are they any good at the exec part? managing staff and developing dishes? and taking over after their boss walked out in a huff?
